Crockpot Cowboy Soup

Ingredients

1 lb ground beef
3–4 medium potatoes, peeled and diced
1 can diced tomatoes, undrained
1 can tomato sauce
1 can corn, drained
1 can green beans, drained
1 can mixed vegetables, drained
2 cups beef broth
1 tsp garlic powder
1 tsp onion powder
1 tsp Italian seasoning
Salt and pepper, to taste

Instructions

Brown the beef: Cook the ground beef in a skillet over medium heat, breaking it into crumbles. Drain any excess grease.
Fill the crockpot: Transfer the beef to the slow cooker. Add the potatoes, diced tomatoes with their juices, tomato sauce, corn, green beans, and mixed vegetables.
Add broth and seasoning: Pour in the beef broth and stir in the garlic powder, onion powder, Italian seasoning, salt, and pepper.
Slow cook: Cover and cook on LOW for 6–8 hours or HIGH for 3–4 hours, until the potatoes are tender.
Finish and serve: Stir well and taste. Adjust the seasoning or add a little more broth if needed, then serve hot.
