Ingredients

  • 1 pound ground beef or ground turkey
  • 1 box (12–14 oz) macaroni and cheese dinner, prepared according to package directions
  • 1 can (10 oz) diced tomatoes with green chilies, undrained
  • 1 packet taco seasoning
  • 1/2 cup water
  • 1 cup shredded cheddar or Mexican blend cheese
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • Chopped green onions or fresh cilantro, for garnish (optional)

Instructions

  1. Prepare the macaroni and cheese according to the package directions and set aside.
  2. In a large skillet over medium heat, cook the ground beef or turkey until browned and fully cooked. Drain any excess grease.
  3. Stir in the taco seasoning and water. Simmer for 2–3 minutes until the meat is well coated.
  4. Add the diced tomatoes with green chilies and cook for another 2 minutes.
